HEALTHY SWEET POTATO CASSEROLE With Pecans, Cranberries And Bacon Topping

Can you believe Thanksgiving is just a few weeks away?! I’ve shared a few recipes my family uses to eat healthier, and there is not better time to try to do this than the Holidays! This Healthy Sweet Potato Casserole recipe I found is literally bursting with flavor, is velvety smooth, and crazy healthy! That’s right, no butter or brown sugar or marshmallows are needed to make this delicious dish! So you are actually getting a HEALTHY side dish and not a quasi-DESSERT!

This Sweet Potato Casserole with Pecans, dried Cranberries and crispy Bacon is a great alternative to the traditional marshmallow, sugar filled sweet potato casserole we are so used to in the South! It makes the perfect side dish for Thanksgiving with the all the TASTE but NOT the fat and calories of the original!

Prep Time 15 minutes  Cook Time 45 minutes  Total Time 1 hour  Servings 6 people  Calories 173 kcal

Ingredients

  • 3 large sweet potatoes peeled and cubed
  • 3 tbsp milk
  • 1 tbsp honey
  • 1 pinch salt
  • 1/4 cup cooked crispy bacon chopped (about one large slice)
  • 1/2 cup pecans chopped
  • 1/3 cup dried cranberries chopped
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground allspice

Instructions

  1. Preheat oven to 360F and lightly grease a small baking dish.

For the sweet potato puree:

  1.  Cook sweet potatoes in a large pot filled with water, until tender. Drain and mash with a food processor (or by hand). Transfer to a large bowl.
  2. Combine sweet potatoes, milk, honey and salt. Pour into baking dish.

For the topping:

  1. While sweet potatoes are cooking, cook bacon and prepare the topping. Toss bacon, pecan, cranberries, cinnamon, ginger and allspice in a small bowl. Sprinkle evenly on top of sweet potato puree.
  2. Bake for 30 minutes. Remove from oven and serve immediately.

 

Optional Ingredient Swaps:

  • Walnuts or Almonds instead of Pecans
  • Applesauce instead of Honey
  • Almond Milk instead of regular Milk
  • Turkey Bacon instead of regular Bacon (now that might be going too far!)
